Popsicles are a cool and healthy treat for kids and adults during the summer and are super quick and easy to make. Prep after breakfast for a late afternoon snack or freeze overnight.

Stainless steel and silicone molds are available to make creating pops super simple but you can use what you have around the house too! Muffin tins, recycled yogurt containers, ice cube trays and even loaf pans work. Just partially freeze your popsicle mix then add a popsicle stick to the mixture. Loaf pans can be sliced into individual servings after removing.

Watermelon Lime Popsicles

  • 3 cups seedless watermelon
  • Juice of 1 lime
  • 1 cup coconut water
  • 1-2 tbs honey to taste
  • Fresh mint leaves (optional)

Blend watermelon chunks until smooth, add lime juice and honey (if desired) and mix well. For an adult treat try adding 1/4 cup of vodka or tequila and mixing again.

If desired pop a couple mint leaves into each mold then pour watermelon mixture into molds with a little space at the top for expansion. Freeze 4-6 hours before serving, and if necessary add popsicle sticks about 1 hour into freezing.

Berry Yogurt Popsicles

  • 2 cups mixed berries
  • 1 cup Greek yogurt
  • 2 tbs honey to taste
  • 1 tsp vanilla extract
  • Fresh berries for optional garnish

Blend berries until smooth. Whisk yogurt, honey and vanilla in a separate bowl. If desired at a 1/4 cup of berry flavored liqueur like Chambord to the berries and mix well. Pour berries into the yogurt mixture and gently swirl to create a marbled effect

If desired pop a couple berries into each mold for texture then pour berry yogurt mixture into molds with a little space at the top for expansion. Freeze 4-6 hours before serving, and if necessary add popsicle sticks about 1 hour into freezing.
